Recipe: Key West Chicken Bites

With temperatures topping out at 104 degrees today, I think a little tropical food is in order. This recipe was originally intended to make Key West Chicken Kabobs, but since I didn’t have any kabob sticks, I decided to transform the dish into Key West Chicken Bites.

I elected to cook the bites on a grill pan. It might be a little difficult to cook loose chicken pieces on the grill, but it is doable on the side where the grates are close together or by using one of those stir fry baskets for the grill that I always contemplate ordering from the Williams Sonoma catalog.

Serve with some rice and fresh corn and you’ve got yourself an easy  warm hot weather meal.

Key West Chicken Bites (recipe adapted from grocerybudget101.com)

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • juice of 1 lime
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 4 skinless, boneless chicken breasts
  1. Cut chicken into approximately 1-inch pieces.
  2. Combine remaining ingredients in a medium bowl, adding salt and pepper to taste. (Since soy sauce is very salty, might not need extra salt).
  3. Add chicken and toss to coat. Marinate in refrigerator for at least 1 hour.
  4. Grill over medium high heat until juices run clear, 4-5 minutes per side should do it.

Yield: 4 servings
