Happy Easter!!! Thought I would share a few pictures from Easter Eggstravaganza which took place yesterday at Walter Elisha Park in Fort Mill. This is a wonderful yearly event sponsored by Lifepointe Church and the Fort Mill Parks and Recreation Department. The weather, which has been iffy this spring, turned out just right for some outdoor fun.

What is so wonderful about Easter Eggstravaganza is that is a completely free event. Inflatables, face painting, music, cotton candy, egg hunt- all of it at no cost! We were there early, before the egg hunt began. If you have any pictures you’d like to share you can email them to me at mahrlig@comporium.net or post them on Fort Mill SC Living’s Facebook Page.

Monday Breakfast- Cadbury Mini-Egg Scones

It’s there. The easter candy is in the stores. There’s something so alluring and tempting about candy that’s only available for a certain time frame. Cadbury Creme Eggs are my favorite, aren’t they everyone’s? The Cadbury mini eggs with the hard candy coating don’t usually tempt me. That is until I saw a recipe for Cadbury Mini-Egg Scones. I cut the recipe in half as it claimed to make 12 scones and I really didn’t need that many. Especially since scones are best eaten right after they are baked. I ended up only getting 4 good-sized scones, but that was perfect for us since there are 4 of us and I wasn’t tempted with any leftovers.

This is the first scone recipe I’ve made that uses greek yogurt instead of heavy cream. The yogurt gives the scone just a slight tang which helps balance the sweetness of the mini eggs. They turned out perfect and just might become an Easter tradition.

Mini Cadbury Egg Easter Scones

Cadbury Mini-Egg Scones (slightly adapted from wearenotmartha.com)

  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 6 tablespoons butter, chilled
  • 1/8 cup sugar
  • 1/4 cup plus 2 tablespoons Vanilla Greek Yogurt
  • 1 tablespoon vanilla
  • 1/8 cup milk
  • 1/2 cup Cadbury Mini-Eggs, crushed (I probably used more like 3/4 cup)
  1. Preheat oven to 350 degrees.
  2. Whisk together flour, baking soda, baking powder, and salt.
  3. Dice cold butter into small pieces and add to flour. Use your fingers to mix butter into flour until it resembles coarse meal.
  4. Add sugar, Greek yogurt, vanilla, and milk to flour mixture and stir.
  5. Add Cadbury Eggs and mix just until all the flour is incorporated into wet ingredients.
  6. Place dough on floured surface and roll (or pat) into an 8-inch circle. Cut into 4 triangles and place on parchment lined baking sheet.
  7. Bake for 16-20 minutes until golden brown around edges. Let cool on pan for a few minutes before placing on a wire rack.

Best eaten warm!
